While it’s still a salad, the eggplant is grilled, so all your vegetarian friends can appreciate some summer grilling. (Here’s a special tip: opt for coconut milk and yogurt to make this dish vegan!)
  3. Potato Salad: This potato salad recipe takes on a healthier twist, as it doesn’t include mayo or egg, making it much lighter than your typical potato salad, and it won’t spoil as fast either!
