Hanukkah is a millennia-old Jewish celebration that takes place over an eight-day period in November or December and is often called the Festival of Lights. Hanukkah means “dedication” in Hebrew and the holiday celebrates the rededication of the Second Temple in Jerusalem. Around 200 B.C., the Jewish people were under the rule of a Syrian king who outlawed their religion, killed many Jews, and took over their temple. A Jewish priest, Matthias, and his five sons led a rebellion against the Syrian king. One of Matthias’ sons, Judah Maccabee, eventually led the rebellion and successfully drove out the Syrians. They then cleaned up their temple and lit the menorah – a candleholder that was meant to be kept burning every night. As they rededicated the temple, there was only enough oil to keep the candle burning for a single night. However, the candles burned for eight nights and this miraculous event inspired the eight-day festival of Hanukkah. To celebrate Hanukkah, a candle is added to the menorah after sundown on each of the holiday’s eight nights. The ninth candle on the menorah, called the shamash (“helper”), is used to light the others. Traditional Hanukkah foods include latkes (potato pancakes) and sufganiyot, a jam-filled doughnut. These foods are typically prepared by frying in oil, as another tie to the miracle of oil.
